Method
Lettuce Cup
Wash the iceberg lettuce and place on
a clean board
With the root to the bench, hit the
stem firmly into the bench until it
breaks off into the lettuce
Carefully hold the stem and twist it
out of the lettuce
Carefully pull the lettuce leaves out to
create the cup
Filling
Preheat a pan on medium to high heat
and drizzle extra virgin olive oil
Once the pan is hot, add the pork
mince and cook through until the
mince is separated and browned
Pour the cooked pork mince into a
separate bowl and place it to the side,
leaving the oil in the pan
Place the spring onions, minced garlic,
ginger paste, red capsicum, celery,
mushrooms and a cup of cooked rice to
the pan and stir to combine and cook
Once the vegetables are soft, add the
pork into the pan and mix to combine
In a separate small dish, mix cornflour
and a small amount of water until
combined
Add the mixture into the pan to thicken
the sauce
Finally, add salt reduced soy sauce, fish
sauce, siracha sauce, rice wine vinegar
and lime juice
Stir the ingredients to combine and
complete the filling
Place a generous amount of filling into
each of the lettuce cups prepared
earlier and enjoy
