Lettuce Cup
Wash the iceberg lettuce and place on
a clean boardWith the root to the bench, hit the
stem firmly into the bench until it
breaks off into the lettuceCarefully hold the stem and twist it
out of the lettuceCarefully pull the lettuce leaves out to
create the cupFilling
Preheat a pan on medium to high heat
and drizzle extra virgin olive oilOnce the pan is hot, add the pork
mince and cook through until the
mince is separated and brownedPour the cooked pork mince into a
separate bowl and place it to the side,
leaving the oil in the panPlace the spring onions, minced garlic,
ginger paste, red capsicum, celery,
mushrooms and a cup of cooked rice to
the pan and stir to combine and cookOnce the vegetables are soft, add the
pork into the pan and mix to combineIn a separate small dish, mix cornflour
and a small amount of water until
combinedAdd the mixture into the pan to thicken
the sauceFinally, add salt reduced soy sauce, fish
sauce, siracha sauce, rice wine vinegar
and lime juiceStir the ingredients to combine and
complete the fillingPlace a generous amount of filling into
each of the lettuce cups prepared
earlier and enjoy
