SUMMER SALADS


Cook’s note
Add dressing to
slaw just before
serving to keep
salad crisp.

CHILLI TUNA SLAW
SmartPoints VALUE PER SERVE 1
SERVES 2 PREP 15 mins COOKING TIME 5 mins


½ cup (80g) frozen corn kernels
½ baby cos, leaves shredded
1 cup shredded red cabbage
100g cherry tomatoes, halved
½ red capsicum, thinly sliced
2 radishes, cut into
matchsticks
2 tbs chopped fresh coriander
1 85g can tuna in springwater,
drained, flaked
1 tbs lime juice
2 tsp salt-reduced soy sauce
1 tsp sesame oil
1 long fresh red chilli,
deseeded, finely chopped


1 Place corn in a heatproof bowl
and cover with boiling water.
Stand for 2 minutes, then drain.
Refresh under cold running
water. Drain.
2 Combine corn, cos, cabbage,
tomato, capsicum, radish,
coriander and tuna in a large bowl.
3 Whisk lime juice, soy sauce,
sesame oil and chilli in a small
bowl. Add dressing to salad and
toss to combine.

ADD IT Microwave brown rice.
Add 3 SmartPoints value for
½ x 125g tub microwave brown
rice and quinoa or brown rice and
chia per serve.
