You’ll need:
1 cup of plain Greek yoghurt
1 tbsp of chia seeds
A handful of raspberries
A handful of chopped up mango
Shredded coconut, pumpkin seeds
or other seeds and nuts, to serve

To make:
1 Ina small bowl, stir together the
yoghurt and chia seeds. Cover,
then leave in the fridge overnight.
2 The next morning, fill a third of
a glass or jar with the yoghurt, add
some berries, before topping it with
yoghurt. Serve with berries, mango,
seeds and some shredded coconut.

What’s so super about it?
Fruit-flavoured yoghurt you buy
from the supermarket has a LOT
of sugar in it. But this alternative
version has barely any at all and
it actually comes from whole fruit,
so it’s a lot healthier! The added
omega-3 fats will help to boost
your brain power so that you can
get through that really long day at
school. Plus, all the vitamins and
fibre from the fresh fruit, as well
as the nuts and seeds, will keep
you feeling fuller for longer.

You’ll need:
2 eggs
1 tbsp milk
A small piece of
ginger, chopped finely
¾ bunch asparagus

Cooking spray
A handful baby
spinach leaves
Pepper

What’s so super about it?
The anti-inflammatory properties of ginger and
the health-boosting properties of the greens will
help calm down irritated skin and soothe your
moods. Not only will you feel good and
light, but your skin will look clearer.

To make:
1 In a small bowl, whisk together the eggs,
milk and ginger until combined.
2 Next, fill the bottom of a medium saucepan
with water and bring to the boil. Place a steamer
basket on top and put the asparagus into it.
Cover and steam for around 5 minutes, or until
cooked. (If you don’t have a steamer basket,
you can steam the asparagus in a microwave).
3 On medium heat, pour the egg mixture into a
frypan (spray the pan with cooking oil first) and
fold the eggs over each other gently until cooked.
The eggs should be fluffy and light-yellow in colour.
4 Serve eggs on a bed of baby spinach leaves and
season with pepper, before adding the asparagus.
