A Letter From Amanda

w

At this time
of the year,
I remove every ounce of
stress from my life, and
chill.It’s a time when I
inhale deeply and exhale
slowly, and find myself
enjoying thepeace of
a much slower-paced
lifestyle. As we wave
farewell to 2016 and
welcome 2017, with the
celebration comes new
ways of thinking and
being. A summer breeze
carries us along as we drift in and out
of daydreams, lazing in the sunshine
and grazing on simply prepared food.
Because, along with this laid-back
way of thinking, comes a lighter way
of eating, including in-season
produce likecherries, berries and
stone fruit. So tostart your summer
foodie daydream, turn to page 12 and
indulge your tastebuds.

After all that Christmas eating,
it’s time to shape up. Eating a healthy,
low-carb diet is one way to do just
that. We have plenty of healthy food
this month, dedicated to all of us who
are feeling heavier than we’d like to.
Our endless summer main meals are
just the ticket to lighter eating. For a
feel-good trim-down, turn to page 28
and start embracing the change.

Then load your body up with
essential omega-3 fatty acids, protein
and vitamin D by adding a little
salmon to your dinner plate. So easy
to prepare and quick to cook, salmon
makes for a tasty meal, page 88.

But now, it’s time for some fun, too.
We all love a little retro and it doesn’t
come much more retro than neenish
tarts, made with that retro ingredient,
gelatine – it’s poised for a comeback,
in glazed cakes and much-loved baked
goodies, page 102.

Holidays are also perfect for
catching up with family and friends,
but while feeding a crowd, we still
want time to socialise. With our
summer express feature – including
platters for a crowd, page 20, and
new ways with prawns, page 56 –
entertaining couldn’t be easier.

Like us, you’ll want to make the most
of the great outdoors – and toss the
picnic basket in the car and create
moments to rememberwith food. Our
alfresco menu, page 130, will bring out
the sunshine on everyone’s plate.

With all this summer loving,
I’m off to meet new friends of my
own, those yummy Raspberry & Pink
Peppercorn Polenta Scrolls, page 100!

Make sure you take time to enjoy
those long and lazy summer days.
