BASIC BUTTERMILK
PANCAKES
PREP + COOK TIME 40 MINUTES SERVES 4

2 eggs, at room temperature
1½ cups (375ml) buttermilk
¼ cup (55g) caster sugar
2 cups (300g) self−raising flour
½ teaspoon bicarbonate of soda
40g butter, chopped
butter, extra, and pure maple syrup,
to serve

1 Whisk eggs, buttermilk, sugar
and combined sifted flour and soda
in a medium bowl until smooth.
2 Melt an eighth of the butter in
a medium frying pan. For each
pancake, pour ⅓−cup measures of
batter into pan; cook pancakes for
2 minutes or until bubbles appear on
the surface. Turn; cook the other side
until browned. Remove from pan.
Repeat to make a total of 8 pancakes.
3 Serve with butter and maple syrup,
or one of the following toppings.
