When I recently enjoyed dinner out

with some very good friends, the main

meal was accompanied by a bowl of

creamy béarnaise sauce. It was so

delicious! The next day, as if guided by

the universe, a magical award-winning

a batch of dreamy sauce. The good news

Chilli Bearnaise Sauce

¼ cup white wine vinegar + 1 onion,

finely chopped + 1 teaspoon dried

tarragon + 4 egg yolks + 2 teaspoons

lemon juice + 250g unsalted butter,

melted + 1 fresh long red chilli,

deseeded, finely chopped

Place the vinegar, onion and tarragon

in a small saucepan. Bring to the boil.

Reduce heat; simmer for 1 minute or

until reduced slightly. Strain through

a fine sieve into a small heatproof

bowl. Place egg yolks, juice and

vinegar mixture in a heatproof bowl

over a saucepan of simmering water

(don’t let base of bowl touch water).

Whisk constantly for 5 minutes or

until mixture thickens. Gradually

add butter, in batches, whisking

constantly, until combined and sauce

thickens (if bowl gets too hot remove

from water occasionally). Stir in chilli.

Season with salt. Makes about 1½ cups.
