4 Creamy Tuna &
Bean Jacket Potatoes
SERVES 4 PREP 10 minutes COOK 1 hour
COST $2.90 a serve

1 quantity Basic Jacket Potatoes (recipe, left)
+ 425g can tuna in springwater, drained,
flaked + ½ cup mayonnaise + Few drops of
red Tabasco sauce + ⅓ cup finely chopped
flat-leaf parsley leaves, plus extra, to serve
+ 80g green beans, thinly sliced + 100g
cherry tomatoes, quartered

1 Preheat oven to 200ºC/180ºC fan-forced.
Make Basic Jacket Potatoes as recipe directs.

2 Combine tuna, mayonnaise, Tabasco
sauce and parsley in a bowl.

3 Cook beans in a small saucepan of
boiling water for 1 minute or until tender.
Drain; refresh under cold water. Spoon
the tuna mixture into jacket potatoes.
Top with the beans and tomato. Serve
sprinkled with extra parsley.

5 Kale Slaw Jacket
Potatoes with Zesty
Yoghurt
SERVES 4 PREP 10 minutes COOK 1 hour
COST $2.85 a serve

1 quantity Basic Jacket Potatoes
(recipe, left) + ⅔ cup grated tasty cheese
+ 2 kale leaves, stalks removed, shredded
+ 1 carrot, shredded + ½ red onion, thinly
sliced + ¼ cup Greek-style natural yoghurt
+ 1 tablespoon lemon juice + ½ teaspoon
poppy seeds

1 Preheat oven to 200ºC/180ºC fan-forced.
Make Basic Jacket Potatoes as recipe directs.

2 Place jacket potatoes on an oven tray. Top
with cheese; bake for 5 minutes or until melted.

3 Combine kale, carrot and onion in a bowl.
Whisk yoghurt, juice and poppy seeds in
a bowl. Top jacket potatoes with kale slaw.
Serve drizzled with yoghurt dressing.

Minted Yoghurt


SERVES 4 PREP 10 minutes
COOK 55 minutes COST $3.20 a serve


1 quantity Basic Jacket Potatoes (recipe,
left) + 1 cup shredded cooked chicken



  • 2 tablespoons barbecue sauce + ¼ cup
    mild chilli sauce + ⅔ cup Greek-style
    natural yoghurt + 2 tablespoons finely
    chopped mint, plus extra small leaves,
    to serve + 2 tablespoons unsalted roasted
    peanuts, coarsely chopped


1 Preheat oven to 200ºC/180ºC fan-forced.
Make Basic Jacket Potatoes as recipe directs.


2 Combine chicken, barbecue sauce and
chilli sauce in a bowl. Whisk yoghurt and
mint in a bowl. Spoon the chicken mixture
into jacket potatoes. Top with minted
yoghurt. Serve sprinkled with peanuts
and extra mint leaves.
