8 Zucchini & Sausage
Jacket Potatoes
SERVES 4 PREP 10 minutes COOK 1 hour
COST $3.10 a serve

1 quantity Basic Jacket Potatoes (recipe,
p68) + 1 tablespoon light olive oil + 300g
Italian-style sausages, casing removed,
rolled into small balls + 1 zucchini, halved
lengthwise, sliced + 1 red capsicum, finely
chopped + ⅓ cup sun-dried tomato pesto
+ 60g fetta, crumbled

1 Preheat oven to 200ºC/180ºC fan-forced.
Make Basic Jacket Potatoes as recipe directs.

2 Meanwhile, heat oil in a frying pan over
moderate heat. Cook and stir sausage for
2 minutes or until browned. Add zucchini
and capsicum; cook and stir for 2 minutes
or until tender. Stir through pesto.

3 Spoon sausage mixture into jacket
potatoes; top with fetta. Bake for 5 minutes
or until golden brown.

6 Pepperoni Pizza


Jacket Potatoes


SERVES 4 PREP 10 minutes
COOK 1 hour 5 minutes COST $3 a serve


1 quantity Basic Jacket Potatoes (recipe,
p68) + 1 tablespoon light olive oil + 1 onion,
finely chopped + 400g can diced tomatoes



  • 1 small green capsicum, cut into
    matchsticks + 1 teaspoon dried oregano,
    plus ½ teaspoon extra + 50g pepperoni
    slices + ½ cup extra-light sour cream


1 Preheat oven to 200ºC/180ºC fan-forced.
Make Basic Jacket Potatoes as recipe directs.


2 Meanwhile, heat oil in a frying pan over
moderate heat. Add onion; cook and stir for
3 minutes or until soft. Add tomatoes, half
the capsicum and oregano; cook and stir
for 3 minutes or until capsicum is tender.


3 Place jacket potatoes on an oven tray.
Spoon tomato mixture into jacket potatoes.
Top with pepperoni. Bake for 10 minutes or
until golden brown. Top with sour cream
and remaining capsicum. Serve sprinkled
with extra oregano.


7 Moroccan Lamb
Jacket Potatoes
SERVES 4 PREP 10 minutes
COOK 55 minutes COST $3.40 a serve

1 quantity Basic Jacket Potatoes (recipe,
p68) + 1 tablespoon light olive oil + 1 onion,
finely chopped + 2 teaspoons smoked
paprika + 1 teaspoon ground cumin
+ ½ teaspoon dried chilli flakes, plus
½ teaspoon extra + 300g lamb mince
+ 400g can chickpeas, rinsed + 1 tomato,
chopped + ½ cup extra-light sour cream
+ ¼ cup chopped coriander

1 Preheat oven to 200ºC/180ºC fan-forced.
Make Basic Jacket Potatoes as recipe directs.

2 Meanwhile, heat oil in a frying pan over
moderate heat. Add onion, paprika, cumin
and chilli; cook and stir for 30 seconds or
until fragrant. Add mince; cook, stirring to
break up lumps, for 5 minutes or until
browned. Stir in chickpeas and tomato.

3 Spoon lamb mixture into jacket potatoes.
Top with sour cream. Serve sprinkled with
extra chili flakes and coriander.
