Tuna & White
Bean Salad
READY IN 15 MINUTES
425g can tuna in springwater, drained,
flaked + 400g cannellini beans, rinsed
+ 200g mixed tomatoes + 1 red onion,
thinly sliced + 1 Lebanese cucumber,
chopped + 60g baby spinach leaves
+ 1 cup flat-leaf parsley leaves
+ 1 tablespoon pepitas (pumpkin
seeds), plus 1 tablespoon extra
+ 1 tablespoon balsamic vinegar
+ 1 tablespoon mayonnaise
+ 1 tablespoon lemon juice
+ 2 teaspoons wholegrain mustard
Combine the tuna, beans, tomatoes,
onion, cucumber, spinach, parsley and
pepitas in a large bowl. Whisk balsamic,
mayonnaise, juice and mustard in a jug.
Add dressing to salad; toss to combine.
Serve sprinkled with extra pepitas.
