DELICIOUS VARIATIONS


Basic Glaze
MAKES 1 quantity PREP 5 minutes
COOK 5 minutes + cooling

¼ cup water
¼ cup caster sugar
1 teaspoon mixed spice

Combine the water, sugar and
mixed spice in a small saucepan
over high heat. Bring to the boil;
stirring. Reduce heat; simmer,
without stirring, for 3 minutes
or until thickened slightly. Cool.

A) Fig, Maple & Walnut
1 quantity Basic Hot Cross Buns
+ ½ cup chopped dried figs
+ ¼ cup chopped walnuts
+ 2 tablespoons maple-flavoured
syrup + ½ teaspoon mixed spice
Prepare Basic Hot Cross Bun recipe,
replacing dried fruit with dried figs
and walnuts. Omit Basic Glaze.
Combine maple-flavoured syrup
and mixed spice in a small bowl
instead. Brush over hot buns.

B) Cranberry, White
Chocolate & Vanilla
1 quantity Basic Hot Cross Buns
+ ¼ cup chopped dried cranberries
+ ¼ cup white chocolate chips
Prepare Basic Hot Cross Bun recipe,
replacing dried fruit with dried
cranberries and white chocolate.

C) Dark Chocolate
& Orange
1 quantity Basic Hot Cross Buns
+ ⅓ cup chopped raisins + ¼ cup dark
chocolate chips + 2 tablespoons
chopped candied peel + 2 teaspoons
finely grated orange zest
Prepare Basic Hot Cross Bun recipe,
replacing dried fruit with raisins,
chocolate chips, peel and zest.

D) Milk Chocolate
Chip & Apple
+ 1 quantity Basic Hot Cross Buns
+ ½ cup chopped dried apple
+ ¼ cup milk chocolate chips

Prepare Basic Hot Cross Bun recipe,
replacing dried fruit with dried
apple and chocolate chips.

E) Triple-choc Caramel
+ 1 quantity Basic Hot Cross Buns
+ ¼ cup cocoa powder, plus
1 teaspoon extra, for glaze + ½ cup
chopped jersey caramels + ½ cup
milk chocolate chips + ½ cup dark
chocolate chips + 50g white
chocolate, melted, for crosses
Prepare Basic Hot Cross Bun recipe,
replacing ¼ cup of flour with cocoa
powder. Swap dried fruit for caramels
and both chocolate chips. Prepare
Basic Glaze, replacing mixed spice
with extra cocoa powder. To make
crosses, omit extra flour and the
water. Spoon white chocolate into
a resealable food storage bag. Snip
one small corner from bag. Pipe
crosses on cooled buns.

+ TO FREEZE Cool buns
completely. Wrap in plastic
food wrap; label, date and
freeze for up to 1 month.
+ TO THAW Buns can be
thawed in fridge overnight.
+ TO REHEAT Microwave on
Medium (80%) in 30-second
bursts until warm.
