Apple Filo Stacks
MAKES 4 PREP 20 minutes + cooling
COOK 20 minutes COST $2.90 each

6 sheets filo pastry
50g butter, melted
½ cup raw sugar
1 teaspoon ground cinnamon
2 red-skinned apples, cored, unpeeled,
cut into thin wedges
⅓ cup golden syrup
¼ cup raisins
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
⅔ cup thick vanilla custard
Whipped cream, to serve

1 Preheat oven to 200ºC/180ºC fan-forced.
Line 2 oven trays with baking paper. Stack
pastry on a clean work surface, brushing
with butter and sprinkling with sugar
and cinnamon between sheets. Cut into
8 squares. Place the stacks onto one of
the prepared trays. Bake for 20 minutes
or until golden brown. Cool.

2 Meanwhile, combine apple, golden syrup,
raisins, cinnamon and ground ginger in a
bowl. Spread over remaining prepared tray.
Bake for 15 minutes or until apple is tender.

3 Spread 2 tablespoons of custard over
each of 4 filo squares, then transfer each
to a serving plate. Top each with another
square of filo. Spoon over apple mixture.
Serve with whipped cream.

Toffee Apple Crumble


SERVES 6 PREP 15 minutes
COOK 25 minutes COST $2.95 a serve


8 apples, peeled, cored, sliced
½ teaspoon ground cinnamon,
plus 1 teaspoon extra
½ x 400g can Caramel Top’n’ Fill
¼ cup thickened cream
¾ cup gluten-free plain flour
⅓ cup firmly packed brown sugar
⅓ cup flaked almonds
¼ cup desiccated coconut
100g butter, chopped
1 tablespoon golden syrup
Vanilla custard, to serve (optional)


1 Preheat oven to 180ºC/160ºC fan-forced.
Place a 20cm (top measurement) round
ovenproof dish on an oven tray. Combine
apple and cinnamon in a large saucepan.
Cook and stir over moderate heat for
5 minutes or until apple is just tender.
Remove from heat. Stir through caramel
and the cream. Spoon into prepared dish;
level the surface.


2 Sift flour and extra cinnamon into a bowl.
Stir in sugar, flaked almonds and coconut.
Make a well at centre.


3 Heat butter and golden syrup in a small
saucepan over low heat. Stir butter mixture
into flour mixture until combined. Sprinkle
flour mixture over apple mixture in dish.
Bake for 20 minutes or until golden brown.
Serve with custard (if using).
