The Thai capital recently welcomed PARK HYATT
BANGKOK, a 222-room hotel nestled within the
top floors of a dramatic curved building. The
spacious rooms come with neutral furnishings, native
wall sculptures and spa-like bathrooms with Le Labo
amenities. Jaw-dropping vistas are everywhere, from
the suites to public areas like the ‘Living Room’ lounge
(above), flanked by eight-metre-high windows.

Australian restaurateurs, including Bill
Granger and Luke Mangan, have long
ventured to Tokyo with satellite eateries.
The latest to join them is Sydney’s Fratelli
Paradiso, which opened a branch in the
city’s Omotesando Hills district earlier this
year. This month, Sam Christie will unveil
Longrain Tokyo, a 160-seater on the 39th
floor of the Yebisu Garden Place Tower.
Helming the kitchen is Griff Pamment. “I’m
excited about finding Japanese ingredients
that we can give a Thai spin,” he says.
Located on Sicily’s east coast, the Mediterranean
to one side and Mount Etna on the other, Rocca
delle Tre Contrade occupies a breathtaking
locale. This October, Italian-Australian chef
Stefano Manfredi will host a week-long
culinary experience at the villa, with
hands-on cooking sessions, excursions to
local markets and outings to acclaimed
vineyards. The magnificent estate boasts its
own lemon grove, vegetable garden and infinity
pool. This year’s event, from October 14 to 21,
will mark Manfredi’s third time at the villa. Who
better than the godfather of modern Italian cuisine in
Australia to ignite your skills? thethinkingtraveller.com
