Apple & Strawberry
Muffins
MAKES 12 PREP 15 minutes
COOK 25 minutes COST $1.95 each

1¾ cups gluten-free plain flour
2 tablespoons gluten-free cornflour
3 teaspoons baking powder
1 teaspoon bicarbonate of soda
½ cup caster sugar
1 cup almond milk
½ cup apple puree
1 green-skinned apple, unpeeled, cored,
grated, plus 1 extra, unpeeled, sliced

1 Preheat oven to 180ºC/160ºC fan-forced.
Line a 12-hole (⅓-cup) muffin tray with

paper cases. Sift flours, baking powder
and soda into a large bowl. Stir in sugar.
Make a well at centre. Whisk almond milk
and apple puree in a jug. Add to flour
mixture, along with grated apple; stir
until just combined, taking care not to
over-mix. Spoon into prepared holes;
level surfaces.

2 Arrange sliced apple over tops of
muffins. Bake for 25 minutes or until
a skewer inserted at centres comes out
clean. Stand in tray for 5 minutes, then
transfer to a wire rack to cool.

Brownie Date Cookies
MAKES 30 PREP 20 minutes + 15 minutes
to chill + cooling COOK 15 minutes
TOP TIP Dates are a great natural
sweetener. Blend them into smoothies,
or sprinkle chopped dates over porridge.

200g dairy-free dark chocolate, chopped,
plus 100g extra
125g dairy-free margarine
¼ cup firmly packed brown sugar
2 eggs, lightly whisked
1¼ cups gluten-free plain flour
1 teaspoon baking powder
1 cup dried pitted dates, finely chopped
Cocoa powder, to dust

1 Combine chocolate, margarine and sugar
in a saucepan; cook and stir over low heat
for 5 minutes or until melted and smooth.
Cool slightly.

2 Stir egg, flour and baking powder into
chocolate mixture until just combined.
Stir in dates. Chill for 15 minutes.

3 Preheat oven to 180ºC/160ºC fan-forced.
Line 2 oven trays with baking paper.

4 Roll level tablespoons of mixture into
balls; place on prepared trays about
3cm apart. Flatten tops slightly. Bake for
10 minutes or until just firm to touch.
Remove from oven. Cool completely
on trays (biscuits will firm). Serve dusted
with cocoa powder.
