2 drained anchovies,
thinly sliced
⅓ cup reduced-fat mayonnaise
1 tablespoon baby capers,
rinsed, plus 2 teaspoons
extra
185g can tuna in oil,
drained, flaked
1 tablespoon lemon juice
400g deli-bought sliced turkey
100g baby rocket leaves
Crusty bread, to serve
(optional)


1 Process half the anchovies,
the mayonnaise, capers, tuna
and juice in a food processor
until almost smooth.


2 Place turkey and baby rocket
on a large serving platter. Top
with the tuna and anchovy
mixture. Top with extra capers
and remaining anchovies. Serve
with crusty bread (if using).

Turkey Tonnato


SERVES 4 PREP 15 minutes

2 teaspoons vegetable
or peanut oil
500g chicken mince
1 cup water
2 cloves garlic, crushed
2 tablespoons lemon juice
1 tablespoon fish sauce
1 red onion, halved,
thinly sliced
1 teaspoon dried chilli flakes
2 tablespoons coriander,
to serve
2 tablespoons chopped
unsalted peanuts
Iceberg lettuce leaves, to serve
3 cups cooked long-grain
white rice, to serve
(optional)

1 Heat oil in a large frying pan
over moderate heat. Add mince
and the water; cook, stirring to
break up lumps, for 3 minutes
or until browned. Add garlic;
cook and stir for 30 seconds or
until fragrant. Add lemon juice
and fish sauce; stir to combine.

2 Spoon mince mixture onto
serving plates. Top with onion,
chilli flakes, coriander and
peanuts. Serve with lettuce and
rice (if using)
