We shared a few drinks with
master blender Joy Spence
of Appleton Estate Rum –
the first woman to hold the
title – to celebrate 20 years
at the top of her game.How does a scientist
get started in rum?
I finished my Master of Science in
Analytical Chemistry but needed
something with creativity, so began
working with Appleton Estate. It’s a
mix of art and science: you analyse
alcoholic strengths and chemical
profiles and then turn to creating the
best possible artistic combination.What makes a good rum?
The layers of flavours: coffee,
vanilla, chocolate, orange and
spices. Premium aged sipping
rums will showcase different tastes
depending on the year they were
produced. A good test is to swirl
the glass, releasing a variety of
aromas and flavours.Try it with?
Dark chocolate. We have a
21-year-old rum that completely
comes to life with dark chocolate.Signature cocktail?
One part Appleton Estate Reserve
Blend, three parts ginger ale, a
slice of orange and five drops
Angostura bitters. Squeeze the
orange into a lowball glass, then
muddle with the rind. Add ice and
the remaining ingredients then stir.L
