Absolutely (the) Best Curry Noodles (ever)!

CURRY SAUCE INGREDIENTS
2 cups of chopped onions
3 heaping tablespoons of salted/fermented
soybeans
¼ cup of almond (roasted & salted almond, or
plain roasted almond – but not raw almond).
3 medium dry red chilies (less if prefer)
1 tbsp tamarind paste soaked in 1 cup water
7 cups vegan broth
1 tbsp sweet soya sauce/sugar
½ teaspoon ground black pepper
¾ cup thick coconut milk
5 tbsp cooking oil
Curry Sauce Filling (optional):
10 pcs of okra
10 pcs of mushroom (if no fresh mushroom,
canned mushroom is okay)
1 pack tofu (14 Oz), fried
HOW TO MAKE THE CURRY SAUCE
- Blend the onions, soybeans, almonds, and red
chilies to make smooth paste. - Heat cooking oil in a deep pot.
- Once oil is hot, add the curry paste, stir well and
lower the heat. - Cook for 5 minutes, occasionally stirring it.
- Pour the Vegan broth, stir thoroughly. Higher the
heat, cover and bring to a boil. - Once boil, add the tamarind water (without seeds),
sweet soy sauce/sugar, and black pepper, stir in. - Add coconut milk, okra and tofu, stir well and let it
simmer uncovered for 10 minutes in low heat. - Then add the mushroom, bring to boil, stirring
occasionally. - After another 10 minutes, turn off and curry is ready.

noodles is my comfort food, so this “vegan noodle recipe” is perfect for holiday get-togethers. Imagine a hearty
curry noodle dish fi lled with Thai, Malay, Chinese and Nyonya (which is already a fusion of Chinese, Malay and other
cooking traits) culinary infl uences – that’s this dish! What makes this our “best curry noodle” recipe ever is that even
if a couple ingredients are missing, or you are not exact on the measurements – it still (most of the time) comes out
absolutely delicious!
