Smoked Beef
Sandwiches
If you’re visiting Montreal, you should
try a smoked beef sandwich. It is
made from beef brisket that is salted
and kept in a spiced brine for a week.
Then it is smoked and steamed, then
sliced. It’s a little like pastrami, but
with more cracked peppercorns and
savory spices like coriander, garlic,
and mustard seeds. Smoked meat is
usually served on rye bread with lots
of mustard.
Beaver Tails
No, we’re not talking about real beaver tails. But they were the inspiration for this type
of fried dough from Ontario. Legend has it that nineteenth century Canadians roasted
beaver tails over a fire to cook the meat inside and then decided that it was a good
way to cook bread, too. Beaver tail pastries are made from dough pulled into the
shape of a beaver’s tail, deep fried, and then topped with things like whipped cream,
banana slices, crumbled cookies, cinnamon sugar, and chocolate hazelnut spread.
There’s even a chain of BeaverTails pastry stands across Canada, as well as in places
like Mexico, France, and Japan.
