Little coconut rocks
SERVES 10
250ml (9fl oz) Alpro Coconut Drink
300g (10½oz) desiccated coconut
2 tbsp maple syrup
2 tbsp cornflour
1 vanilla pod
¼ tsp salt

1 Preheat the oven to 180°C/Gas Mark


  1. Mix the Alpro Coconut, cornflour and
    maple syrup in a saucepan over a low
    heat. Stir until it thickens; about
    2-3 minutes. Remove from the heat.
    2 Remove the seeds from the vanilla
    pod. Add the vanilla seeds, salt and
    desiccated coconut to the mixture in the
    saucepan. Stir until well blended.
    3 Put a tablespoon of the mixture on a
    baking tray lined with greaseproof paper.
    Sprinkle over some extra coconut. Bake
    for 10-15 minutes or until golden brown.


Soft oat cookies


SERVES 15

150g (5½oz) plain flour, sifted
150g (5½oz) rolled oats (not quick-
cook)
2 tsp baking powder
2 tbsp honey
1 tbsp vanilla sugar
70g (2½oz) dried cranberries
1 tsp cinnamon powder
3 tbsp baking margarine, melted
1 large free-range egg, lightly beaten
200ml (7fl oz) Alpro Oat
Unsweetened drink
a pinch of salt

1 Preheat the oven to 200°C/Gas Mark


  1. In a medium bowl, whisk together
    the flour, oats, baking powder, salt,
    vanilla sugar, cranberries and cinnamon.
    2 In a small bowl, whisk together the
    baking margarine, egg, honey and Alpro
    Oat Unsweetened drink until combined.
    Add to the flour mixture and stir until the
    batter is evenly moistened.
    3 Drop 1 tbsp bat ter onto a baking sheet
    and repeat until all the batter is used.
    4 Bake until golden brown, about
    15-20 minutes. Let the cookies cool on a
    wire rack for 5 minutes, then serve.
