125gsmoothlow-fat
cottagecheese
125ml(½c)plainfull-cream
yoghurt
10ml(2t)sugar
TOSERVE
desiccatedcoconutflakes,
toasted
granadillapulp


Preheattheovento180°C.


Greasea 23cmspringform
caketinwithnonstickspray.
1 CakeIna largemixing
bowl,beattogetherthe
eggs,vanillaessence,
sugar,sweetenerandoil
untillight.
2 Ina separatebowl,mix


thecrushedpineapple
andmashedbananas.
3 In a third bowl, mix the


ground coconut and dry
ingredients.
4 Alternate folding the
pineapple mixture and
the dry ingredients into


theeggmixture.
5 Transfer to the prepared
cake tin and smooth the
surface. Bake for 55-60
minutes or until a skewer
inserted into the middle
of the cake comes out
clean. Leave to cool, then
carefullyremovefrom
thetin.
6 ToppingMix the cottage
cheese,yoghurtand
sugar.
7 To serve Spoon dollops
of the topping on the
cake. Sprinkle coconut
flakes and drizzle grana-
dilla pulp over.

MARSHMALLOW
CHOCOLATE CAKE

The meringue for
this cake is whisked
over hot water, giving
the cake a marshmal-
low texture. Dried
fruit and seeds are

deliciousbutyoucan
use nuts instead of the
seeds.

125g dried apricots and
driedpearsorpeaches,
chopped
100gsunflowerseeds,
toasted
25gsesameseeds,
toasted
25gpumpkinseeds
80ml(¹⁄₃c)cocoa powder
6 eggwhites
pinchofsalt
50gdemerarasugar
180g sweetener such as
erythritol
TOFINISH
cocoapowder
handful of chocolate-coated
almonds
TOSERVE
125g low-fat cream cheese

125ml(½c)plainfull-cream
yoghurt
10ml (2t) icing sugar

Preheat the oven to 160°C.
Grease a 20cm square
springform tin with non-
stickspray.Linewithbaking
paperandgreaseagain.
1 Mix the dried fruit, seeds
andcocoapowderand
setaside.
2 Put the egg whites, salt,
sugar and sweetener in a
glass bowl. Put the bowl
over a pot with hot water


  • make sure the water
    doesn’t touch the bottom
    of the bowl. Then put the
    potandbowlona heated
    stoveplate.
    3 Vigorously whisk with a
    wirewhiskuntilthesugar
    hasdissolved.
    4 Remove from the heat
    then whisk with an


electric whisk for at least
7 minutesoruntiltheme-
ringueisthickandshiny.
5 Lightly fold the dried
fruit mixture into the me-
ringue, then transfer to
thepreparedtin.Don’t
smooththetop.
6 Bake for 45 minutes or
until a skewer inserted
into the middle comes
outclean(thecake
shouldbespongy).
Remove from the oven
and leave to cool com-
pletelyinthetinuntil
firmlyset.
7 To finish Carefully turn
out onto a serving plate.
Sift cocoa powder over
andsprinklechocolate-
coatedalmondsontop.
8 To serve Mix the cream
cheese, yoghurt and icing
sugar and serve with the
cake. S
