1 cup bourbon whiskey (see tip)
3 cups cola
1 cup tomato sauce
2 teaspoons Mexican chilli
powder
1 / 3 cup smoky barbecue sauce
2kg American-style pork ribs



  1. Combine bourbon, cola,
    tomato sauce, chilli powder
    andbarbecuesauceina large


shallow bowl. Add ribs to
coat. Cover with plastic wrap
and refrigerate overnight.


  1. Preheat a covered barbecue
    with all burners on low and
    hood closed until temperature
    reaches 180°C.

  2. Drain ribs; reserve marinade.
    Transfer ribs to two oiled
    disposable foil roasting pans
    and cover with foil. Turn


burners off underneath
meat, leaving other burners
on low. Cook with the hood
closed for 1 ¼ hours. Increase
barbecue heat to 200°C.
Remove foil, turn ribs
and baste with any juices.
Barbecue for a further 30
minutes, using 1 cup of
the reserved marinade for
basting every 10 minutes,

until tender. Do not baste
during the final 10 minutes
of cooking time.


  1. Place remaining reserved
    marinade in a large saucepan
    and bring to the boil. Boil for
    20 minutes or until marinade
    reduces to about 1 ½ cups.

  2. Serve ribs with reduced
    marinade and chargrilled
    corn cobs, if liked.
