1.Preheata coveredbarbecue
withallburnersonlowand
hoodcloseduntiltemperature
reaches240°C.
2.Patchickendryinsideand
outwithpapertowel.Pound
fennelseedsusinga mortar
andpestle.Combinewith
spices, sugar, salt and pepper.

Stirinoil,rindandjuice.Rub
spicemixtureoverchicken
andinsidethecavity.
3.Pour½ cupofthebeerout
ofthecan;reserveforanother
use.Placecanincentreof
mediumdisposablefoil
roastingpanlinedwith
crumpledfoil.Usecrumpled
foiltoholdbeercanupright.
Placechickenuprightonbeer
can,pushingcanintothe
chicken cavity. Carefully

placepanincentreof
barbecue;turnburners
offunderneathchicken,
leavingotherburnerson
low.Cook,hoodclosed,for
1 hourand 10 minutes,
rotatinghalfwaythrough,
oruntilgoldenalloverand
juicesrunclear.
