Papaya Salad


SERVES 4 PREPARATION 20 MINUTES

400gpapaya,peeled,julienned
300ggreenbeans,thinlyslicedlengthwise
2 cupsshreddedcookedchicken
200gpunnetbabyromatomatoes, halved
60gmixedsaladleaves
1 carrot,peeled,julienned
1 bunchcoriander,leavespicked
½ smallredonion,thinlysliced
1 longredchilli,thinly sliced
DRESSING
¼ cuplimejuice
1½tablespoonsbrownsugar
1 tablespoonfishsauce
2 teaspoonstamarindpuree

1.Ina largebowl,combinepapaya,
beans,chicken,tomato,saladleaves,
carrot,coriander,redonionandchilli.
2.DRESSING.Ina smalljug,whiskall
ingredients.Setasideuntilrequired.
3.Whenreadytoserve,tosshalf
dressingthroughsalad.Season.
Accompany with remaining dressing.

& Peanut Rice
SERVES 4 PREPARATION 10 MINUTESCOOKING 45 MINUTES

½ bunchcoriander,roots, stalks,
leaves,separated
¼ cupsoysauce
finelygratedzest,juice1 lime
1 redshallot,peeled,halved
1 tablespoonfreshginger,finely
chopped
1 tablespoonbrownsugar
2 garliccloves,crushed
1 longredchilli,finelychopped, plus
extraslicedto serve
1kgchickenpieces
steamedbroccolini,hotsauce to serve
PEANUTRICE
1½cupsjasminerice
1½cupswater
½ cuproastedsaltedpeanuts, chopped

1.Preheatovento200°C.
2.Ina smallfoodprocessor,pulse
corianderroots,stalks,soy,lime,
shallot,ginger,sugar,garlicand
chillitoa paste.
3.Placechickenina largebakingdish.
Coatalloverinmarinade.Bakefor
40-45minutesoruntilchickenis
cookedthroughandskinis crisp.
4.PEANUTRICE.Cookricefollowing
packetinstructionswithwater.Drain
if necessary.Returntopanwith
peanutsandcorianderleaves.
5.Servechickenwithrice,slicedred
chilli,steamedbroccolini and hot
sauce, if desired.
