1.Ina largesaucepanofboiling
saltedwater,cookpastafollowing
packetinstructions.Drain,return
topanandkeepwarm.
2.Heata largefryingpan,halffilled
withwater,onhighuntilboiling.
Reduceheattolow.Stirinvinegar.
Crackeggs,oneata time,intogently
simmeringwater.Simmer,splashing
witha littlewater,for1-2minutes
oruntilcookedtotaste.
3.Tossvegetables,spinach,lemon
zest,juice,oil,garlicandchilliflakes
