METHOD
1 Ina saucepan,heattheoilovermedium
heat.Addtheonionandpepperandfry
untiltheonionissoftandtranslucent.
2 Addthecurrypowderandfry,stirring,
for 15 seconds.Addthetomatoesand
cookuntilsoftandtheychangecolour
slightly.
3 Addtheminceandcookfor 10 minutes,
stirringfrequently,andthencoverwith
thelid.Addthestockcubesandwater
andstir.Coverwiththelidandsimmer
for 15 minutesonmedium-lowheat,
stirringfrequently.
4 AddtheHarvestimeMixedVegetables
andacharandstir.Addthesouppowder,
stirandcookfor3-5minutes.
5 Puta non-stickpanonhighheatand
tosstherotisorwrapsfor 10 secondson
eachside.Spread2,5ml(½t)mayoor
sweetchillisauceoneachrotiorwrap.
Addthepineapple,a sprinkleofcheese
andthemincefilling,wrapandservewith
Harvestime

1 onion, chopped
1 red pepper, chopped
15ml (1T) Rajah Mild & Spicy Curry
Powder
3 fresh tomatoes, chopped
500g beef mince
2 x vegetable curry stock cubes
250ml (1c) water
250ml (1c) Harvestime Mixed Vegetables
vegetable achar
15ml (1T) chakalaka soup powder
6 rotis OR wraps
mayonnaise OR sweet chilli sauce
200g pineapple, diced
1 block of cheddar cheese, grated
Harvestime Potato Chips, fried
PREPARATION: 10 MIN | COOKING: 40 MIN
METHOD
1 Melt the margarine in a pan over
medium-low heat then sauté the
ginger and garlic for 2 minutes.
Remove from the heat and add
the dried herbs, lemon pepper
seasoning, vinegar and honey and
mix well together.
2 Pour over the chicken and
marinate for 30 minutes before
frying in a non-stick pan over
medium-high heat for 2-3 minutes
on each side or until done to your
liking.
3 Heat the oil to 175°C in a pan. Put
your Harvestime Potato Chips in a
frying basket and let them sizzle for
4 minutes or until they’re lovely, crisp
and lightly golden. Lift the basket
out, shake off the
oil and season to
taste. Set aside.
4 Serve the
chicken and chips
with the wild
rocket salad.
