drink, but everything goes from bad to worse.
Later on, events catch up with Phil and he
finds himself in a dangerous fight.
INSIDE THE FACTORY
BBC2, 8pm
Gregg Wallace in a hair net signals
the return of this fascinating, stat-
packed series.
And this opener is a corker –
following a day in the making of a
Cherry Bakewell.
At a bakery in Stoke-on-Trent, they
produce 250,000 of the cherry-topped
tarts every day, with the Mr Kipling
favourite a best seller.
From the arrival of 27 tons of flour
right through to meeting a crack team
of 12 that carefully pops each cherry
on top of the tarts by hand, Gregg is
there every step of the way.
Meanwhile, historian Ruth Goodman
sniffs out the origins of the Cherry
Bakewell’s key ingredient, frangipane.
And listen up, fact fans, the fragrant
almond filling was born out of a
perfume used to disguise the foul
smells of 17th-century Paris.
We also discover how the tart is
actually the result of a recipe mistake.
Elsewhere, Cherry Healey learns
how to swerve a soggy bottom when
home baking.

Indian tigers
COUNTING TIGERS: A
SURVIVAL SPECIAL
ITV, 9pm
“The tiger is perhaps the most
majestic animal on our planet, but
we’ve pushed it to the very edge
of extinction,” says Joanna
Lumley, and we’re already
hanging on her every word.
She narrates this special that
follows India’s first ever fully
scientific tiger count.
The stakes are high. It’s
believed there are fewer than
4,000 left in the wild.
Two are killed every week by
poachers, with their cubs left
orphaned and struggling.
With India home to around
60% of tigers, the country counts
them every four years. The
figures are about to be released –
but will they be up or down?
This film follows wildlife
campaigner Martin Hughes-
Games as he tracks the count
from start to finish and experts
use thousands of tiger images,
capturing their stripes – like
fingerprints – to identify them.
Martin admits: “It’s becoming
more difficult for the tiger to
survive in this country.”
Chefs on a
knife-edge
TALENT Jason only
wants the creme de la
creme for his brigade
THE CHEF’S BRIGADE
BBC2, 9pm
KITCHEN-based shows are often
very serious. You know the drill –
lots of yelling, crying, hugging
and everyone getting into a hot,
sweaty, stressed-out mess.
This latest concoction is no
exception. It sees Michelin-starred chef
Jason Atherton on a mission to take a
team of raw cooking talent and turn
them into a chef ’s brigade. But what is
a chef ’s brigade you may wonder?
Jason explains: “I’m obsessed with
food. It’s my life, it’s who I am. But if you
want to make world-class food, it’s never
about one individual, it’s always about
building a team. And in the kitchen,
that team is known as the brigade.”
Jason has four Michelin stars and 18
restaurants. Putting these teams
together is what he does for a living
and he’s deadly serious about getting
this right.
He’s handpicked some chefs who
have raw talent but only basic skills.
After a few weeks they will be
competing with the brigades at Europe’s
finest restaurants. Cue the drama.
On meeting these chefs, they are
mostly young, wide-eyed and slightly
scared. Some have never been abroad
before and they’ve certainly never eaten
in top restaurants.
Jason whisks them straight off to a
posh restaurant in Italy before they’ve
even started.
They will have four days to get up to
standard and cook with the head
chef there.
Gin-infused cuttlefish anyone? Surely
that will be a breeze to whip up.
It’s all quite stressful and will build
towards a final showdown against those
bastions of fine dining, the French. The
knives are out.
