nScrub a raw beetroot well and trim away any roots and
stalks, roughly chop and put it into a blender or smoothie
maker. Add the blackberries and the ginger then top up with
apple juice. Whiz until smooth. Add a little more apple juice if
it’s too thick.

Beetroot, blackberry, apple and ginger juice

4 1 raw beetroot
4 ½ punnet

nfirst make the sugar syrup. Add the water and caster sugar to a large saucepan and
bring to a boil, stirring constantly. When it reaches boiling point remove from the heat
and allow to cool. kee p refrigerated until needed.
nAdd the Eisberg Alcohol-fre e Sauvignon Blanc, watermelon purée or juice, lemon
juice and sugar syrup to a mixing glass. Shake the ingredients in the mixing glass then
strain into an extra wide coupe glass.
nUse a melon baller to create balls of watermelon. Add to skewers along with mint
leaves to garnish.

4 125ml Eisberg Alcohol-fre e Sauvignon Blanc 4 100ml watermelon purée/juice
4 20ml lemon juice 4 50ml sugar syrup 4 watermelon and mint leaves, to serve
For the sugar syrup 4 500ml water 4 500g caster sugar

chilled coconut water. Whiz until smooth. Add a little more
coconut water if it’s too thick.
