Zestandjuice 1 lemon, plus lemon slices to serve
Seasalt
3 eggs
2 Tbspcrèmefraîche, plus extra to serve
if desired


2 tsproughlychoppeddill, plusdill
sprigstogarnish
Generousknobbutter
100gsmokedsalmon,flaked
1 Tbspthinlysliced red onion
1 tspcapers


1 Put therocketina
smallbowlandadda
splashofoliveoil,
lemonjuicetotaste,and
a pinchofseasalt.


2 Ina smallbowlwhisk
togethertheeggs,crèmefraîche,
zestandchoppeddill.Seasonwellwith
seasaltandfreshlygroundblackpepper.


3 Heatbutterina heavy-basedfrying
panovermedium-highheat.Once
butterisfoaming,pourinegg
mixtureandtippantoevenly
cover the base. As the egg begins


tosetroundtheedgesgentlypushthe
eggwitha flat-endedwoodenspoon
towardsthecentreofthepan.Gentlytip
pantoallowtheuncookedeggtorun
ontotheareaswherethecookedeggwas.
Cookuntileggisalmostsetthen
carefullyfoldinhalf and slide onto a
warmedplate.

4 Putthedressedrocketontheplate,
scatterwithsalmon,redonionandcapers
and sprinklewithdillsprigs.Servewith
lemonslicesandextracrème
fraîcheif you’refeeling
