coriander. Add finely chopped chilli.
Cook the rice in the microwave. Place a
non-stick frying pan on a medium to high
heat and add the oil. Add 2 salmon fillets,
along with half the teriyaki liquid. Leave
the rest in the bowl. Cook for 2 minutes
on one side, depending on thickness,
then 2 minutes on the other. Turn heat
off and cover. Trapped heat will steam
the thickest part of the fillet.
Put the rest of the liquid and the other
2 fillets into a freezer bag for next time.
Serve the rice alongside the salsa, top
with the rest of the salmon, and drizzle
with a small sprinkling of sesame seeds.

Chocolate Hazelnut Mousse
INGREDIENTS
200g chocolate hazelnut spread; 50ml whole milk; 600ml
double cream; 1 tablespoon cornflour; 3 tablespoons icing
sugar; 100g roasted chopped hazelnuts; whippy cream, from
a can, to serve (optional); cocoa powder for dusting.
METHOD
Pop spread in a bowl with the milk and heat in the microwave
in 10-second bursts until the mix is runny and viscous, but not
steaming. This should take 20 seconds max. Set aside to cool.
Put the cream into a large bowl with the cornflour and icing
sugar and begin whipping. As soon as it begins to thicken,
pour in the choc mixture and whip until you have stiff peaks.
Fold through the hazelnuts (keeping a tablespoon back for
decorating), then spoon into a serving dish or individual
ramekins. If you want it to look extra special, you can
pipe the mousse in.
Serve with whippy cream if desired, with an extra sprinkling
of hazelnuts on top and a dusting of cocoa powder.

INGREDIENTS
For the pastry: 300g plain
flour; a pinch of salt
150g cold butter, cubed
3–4 tablespoons cold water
For the filling: 2 tablespoons
vegetable oil; 2 cloves of
garlic, crushed; 1 large sprig
of fresh thyme; 2 small red
onions, sliced; half teaspoon
salt; 1 large sweet potato,
peeled and cut into
1cm cubes (about 300g); 100g
goat’s cheese; 3 medium
eggs; 200g crème fraîche;
half teaspoon salt; 1 teaspoon
paprika.
For the dressing: 85g
watercress; 1 lemon, zest and
juice; 100g pine nuts; 5 tbsps
olive oil; a pinch of salt
METHOD
Put the flour and salt into a
bowl, then add the butter and
rub it into the flour until it
resembles breadcrumbs. Add
tablespoons of water until the
dough comes together.
Dust a work surface with
flour and roll out the pastry
until it is large enough to cover
the base and sides of a deep
23cm loose-bottomed tart tin
and leave a 1cm overhang.
Prick the base a few times,

then pop the tart shell into the
freezer for 15 minutes. Preheat
the oven to 200°C/fan 180°C.
Now make the filling. Heat
the oil in a pan, then add the
garlic and cook until golden.
Add the thyme sprig, along
with the onions and salt, and
cook until the onions are soft.
Stir in the sweet potatoes, then
pop the pan on a low to
medium heat and cover.
Take the tart shell out of the
freezer. Put a piece of baking
paper inside, with some baking
beads, and bake for 15 minutes.
Let the sweet potatoes cool.
Discard the thyme sprig, but
leave the little leaves in there.
Make the dressing by mixing
the watercress, lemon zest and
juice, pine nuts, oil and salt.
Take the tart shell out of the
oven, remove the paper and
beads, and bake for another 5
minutes. Take it out, and
reduce the oven temperature
to 180°C/fan 160°C.
Spoon the potato mixture
into the tart shell and scatter
the goat’s cheese all over.
Pop it back in the oven for a
few minutes until the cheese
starts to bubble, then drizzle
over the dressing to serve.

Call the Midwife is commissioned to run on
BBC1 for another three years, but writer
Heidi Thomas has revealed she plans to
ease herself out in “a year or two”.
But talking to Lord Melvyn Bragg, for
The South Bank Show, she said the idea
she might leave the show before it ends in
2022 is, “nonsense and balderdash”.
Heidi, 56, said as a 10-year old she’d read
every book in the children’s section of her
local library in Liverpool so was allowed to
have her adult library card two years early.
English was clearly her strong suit – but
perhaps she should have spent a bit more
time on her maths...

James’ beg break


James Corden was not
always TV’s golden boy. He
once literally had to beg for a
role – on his knees.
It turns out his hugely successful
showbiz career was sparked by
a lucky break handed to him by
drama writer Kay Mellor.
She gave him his chance in
ITV drama Fat Friends, which
aired in 2000 and also starred
Gavin & Stacey’s Ruth Jones.
Remembering such a pivotal
moment on the RHLSTP
podcast, Kay, 68, recalls: “Ruth

and James were the real McCoy. I had
seen James on an ad where he played the
Tango boy in the background.
“I rang my casting director saying,
‘There is a lad in an advert with ginger
hair and chubby’, and she found him for
me. I was in London at The
Groucho Club and this lad
came stumbling in.
“He got down on his knees
and said, ‘Please give me this
part. I have battled all my life
with weight’.
“I thought, ‘He will be
perfect if he can act’. The rest
is history.”
