Directions
- Before you do anything preheat the oven to 350 F.
- Get a blender: combine in it the garlic, 1/2 tsp salt, paprika, cumin, and cayenne pepper.
Blend them until they become like a paste. - Combine in the parsley with cilantro then blend them again. Pour the lemon juice, vinegar,
a pinch of salt and 2 to 3 tbsp olive oil. - Process them until they become smooth to make the marinade.
- Get a large mixing bowl: toss in it the potatoes, peppers, celery and a pinch of salt. Add the
marinade and stir them well. - Spread the mix in a greased casserole dish. Top it with the remaining oil. Place a piece of
foil to cover the casserole. - Cook the potato casserole in the oven for 37 min. discard the foil then cook it for 25 min.
serve it warm. - Enjoy.
