Directions
- Place a large saucepan over medium heat. Heat 2 tbsp of oil in it. Sauté in it the garlic
with onion for 2 min.
- Combine in the rice and cook them for 3 min. Pour in the stock and cook them until they
start boiling.
- Put on the lid and cook them for 14 min.
- Place a skillet over medium heat. Heat in it the rest of oil. Sauté in it the green onion with
tomato, parsley, a pinch of salt and pepper.
- Cook them while stirring often for 6 min. turn off the heat then stir in the avocado with
olives.
- Use a fork to stir the rice and remove the grains. Add it to the tomato mix and stir them
well. Serve it warm.
- Enjoy.
