Directions
- Discard the ends of the eggplant. Peel wide strip of the eggplant skin leaving some of it
on. Slice them into 1/4 inch slices.
- Get a small mixing bowl: whisk in it the spices with eggs.
- Place a large skillet over medium heat. Heat 1 inch of oil in it. Dip the eggplant slices in
the eggs mix then cook them until they become golden brown on each side.
- Drain the fried eggplant slices and place them on some paper towels to drain the excess
oil. Serve them with your favorite dip.
- Enjoy.
