starting with the dining and drinking establish-
ments. Gleneagles is home to Andrew Fairlie,
a two Michelin–star restaurant by one of Brit-
ain’s great chefs. The restaurant is known for
its use of local ingredients like Scottish lob-
ster, Perthshire roe deer, and highland lamb,
among others. Equally devoted to Scottish her-
itage is the Strathearn, which offers a fine din-
ing, silver service experience.
In Scotland, aperitifs and digestifs are essen-

tial, and there’s no better place to enjoy them
than the American Bar. This new space recalls
Prohibition-era speakeasies—intimate nooks,
dark lighting, and all. Order a Lindy Hop and
toast the spirit of the old bootleggers. For a
good selection of single malts, check out the
tower at the Century Bar, which offers such
gems as a 1924 Royal Brackla at $2,300 for a
double measure—the ultimate way to toast a
perfect day in the country. (gleneagles.com) «

challenged by the upland terrain of the King’s course; spend a day on the field with gun dogs.
