8 slices thick-cut bacon
3 tbsp maple syrup
½ tsp coarsely ground black pepper
¼ cup mayonnaise
2 medium tomatoes, thinly sliced
4 leaves cos lettuce, halved
8 Ultimate Classic Waffles (page 23)
or frozen waffles, reheated
- Preheat oven to 220°C. Arrange
a wire rack in a large rimmed baking
tray lined with foil. - Arrange bacon in a single layer on
rack. Brush generously with syrup;
sprinkle with pepper. Roast for 22
to 28 minutes or until browned and
crisp. - Spread mayonnaise on one
side of waffles. Top half of waffles
with bacon, tomatoes and lettuce.
Top with remaining waffles. Serve
immediately.
