SERVES 1 (each one)
PREPARATION TIME 15 minutes


FOR THE RABBIT’S REVENGE
1 raw beetroot
2 celery sticks
1 green apple
Carrots (to add bulk)
Crushed ice
GARNISH: Celery stick,
beetroot sprouts

FOR THE GINGER SPICE
2 green apples (we use
Golden Delicious)
½ thumb-sized piece fresh ginger
Carrots (to add bulk)
Crushed ice
GARNISH: Apple fan,
ginger slice, carrot shaving

Both drinks are made using
the same method, as follows:
1 Pass all the ingredients
through a juice extractor.

2 Pour the liquid gently into a
hurricane glass containing a little
crushed ice, holding back the surface
foam on the juice as much as possible.
3 Garnish as shown; serve straight away.
Note Use fridge-cold fruit and veg to
give a refreshingly cold drink that
requires absolutely minimal ice.

Without doubt the best way to deliver goodness to your body is with pressed and
extracted juices, particularly vegetable ones. They facilitate the absorption of vitamins
and minerals in the most enjoyable way possible. Just holding one of these bad boys
gives a feeling of wellness and is the perfect antidote for what you did last night.
