PREPARATION TIME
5 minutes
O1 lime, quartered
O25ml sugar syrup
O10 mint leaves
O50ml white rum
OCrushed ice
O40ml soda water
GARNISH: Mint sprig,
lime slice
1 Muddle the lime quarters
and sugar syrup in a highball
glass. Add the mint leaves
and bruise gently (try not
to smash or tear them).
2 Add the rum and stir with
a bar spoon. Leaving the spoon
in the glass, add ½ a scoop
of crushed ice and stir again.
3 Add soda and stir. Top up
with crushed ice, garnish as
shown and serve straight away.
