chopped
¼ tspcastersugar
¼ tspfreshlyground
whitepepper
½ tspgroundfenugreek
15 gmbutter,diced
¾ tsphoney
100 mlwheyreservedfrom
labne (see recipe p93)

Dehydrateuntildrybutnot
crisp(10-12hours).Grindin
a spicegrinderorwitha
mortar and pestle.➤

1 Fordressing,combine
sesameoil,gingerandgarlic
ina smallsaucepanover
mediumheatandstiruntil
golden(2-3minutes).Add
sugar,pepper,fenugreekand
½tspfinesaltandsimmer
untilfragrant(1-2minutes).
Slowlywhiskinbutter,
honeyandwhey,andcook
untilcombinedandslightly
thickened(8-10minutes).
Cool,thenchilluntilrequired.
