A potatosaladwillsatisfyappetitesandis easytotransport.Usea potatoofyourchoice,
butthecombinationofbothdressingsis non-negotiable.Fora picnic,keepthedressing,
mayonnaise, nuts and extra herbs packed separately until you’re ready to serve.

1 kgDutchcreampotatoes,
peeledandthicklysliced
200 gmgreenbeans,trimmed
½ whiteonion,thinlysliced
6 largegreenolives,
largeroliveshalved
40 gm(¼cup)mixedroasted
almondsandhazelnuts
HARISSAMAYONNAISE
2 tspharissa
75 gm(¼cup)mayonnaise
HERBDRESSING
1 garlicclove,crushed
60 ml(¼cup)mildextra-
virgin olive oil


½ cupeachflat-leafparsley,
corianderandmintleaves,
plusextratoserve
Juiceof1 lemon

1 Placepotatoesina saucepan
ofcoldwateroverhighheat,
bringtotheboilandcookuntil
almosttender(10-12minutes),
thenaddbeansandcookfora
further3 minutesuntilpotatoes
andbeansaretender.Drain,
steamdryandcool.
2 Forharissamayonnaise,
combine ingredients in a bowl.

3 Forherbdressing,combine
garlicandoilina blender,
thenaddherbsandblendto
a coarsepaste.Addlemon
juiceandseasontotaste.
4 Combinepotatoes,beans,
onionandolivesina serving
bowl.Toserve,dotwithharissa
mayonnaiseandherbdressing
totaste,andscatter over nuts
and herbs.
