s a child, Jason Bangerter vividly remembers
chasing lobsters on the kitchen fl oor of his
grandparents’ Nova Scotia cottage. Holidays
were shared between grandparents in
Ontario hunting, fi shing and foraging, while in Nova
Scotia days were spent by the ocean digging for clams
with his brother, visiting lobster boats and baking bread
with his grandmother. Little wonder the culinary gene
runs deep in this renowned Ontario chef, fuelling his
passion for the area he calls home.
“Ontario is home sweet home in every sense of the
words. The terroir you inhabit dictates the cuisine in
Canada, and the terroir is very diff erent from region
to region across the country. Ontario has so much
variety to off er, from the southern region of Niagara
where you fi nd wine and sweet summer fruits, to the
vast pastures and farms where animals roam freely.
“The province has also become a leader in farming
freshwater seafood in a reasonable and sustainable

way, which has opened up unique opportunities
for Ontario chefs who are landlocked between the
coasts,” he says.
“At a local level, I’m spoiled for choice in Cambridge.
Over 80 percent of the ingredients we use at Langdon
Hall are sourced in Ontario. We forage in the local forest
for wild edible ingredients. Each year I work closely
with our head gardener Mario Muniz to plan the crops
for the kitchen garden – the many varieties of vegetables,
leaves, herbs, roots, fl owers and seeds that we grow are
incorporated into all our menus. These delicious treats
are pollinated by our property’s own bees, which also
supply us with extraordinary honey.
“Creating cuisine in this beautiful setting has allowed
my dishes to evolve, while emphasising the area’s terroir.
On top of that, our mixologists pull inspiration from
the property and local farms, breweries and distilleries
to create unusual beverage experiences. It’s hard not
to feel blessed living and working here.”
