1. Heat the oven to 200°C, Gas 6. Whiskthe egg whites with 2tbsp water. Heat asmall non-stick ovenproof frying pan andadd a couple of squirts of Frylight. Pour inthe egg white and cook for a few mins toset the base. Then put the pan in the ovenand cook for 3-4 mins until cookedthrough. Turn out onto a plate to cool.
2. Meanwhile, add 3 squirts of Frylight tothe frying pan and cook the pepper for 3-mins. Add 2tsp water, the tomato, beansand chilli and cook for 5 mins. Serve theomelette topped with the pepper mixtureand coriander, then roll up. Serve witha lime wedge to squeeze over.
