COmmON KITCHEN HERBS

Light: Full sun
Soil: Well drained, with plenty of compost
Plant: Seedlings or cuttings; seeds take up to six
months germinate
Water: Thoroughly every few days, when the soil feels
somewhat dry to the touch; do not overwater or let it
dry out.
Harvest: After about two years, bay leaves should
be ready for harvest. Snip ripe, full-grown leaves as
needed.
Care: Prune regularly to keep the size in check. If you
live in a hot or tropical climate, provide partial shade for
the plant so it doesn’t dry out. Protect it from strong
winds and frosts. In cool climates, bring indoors before the first frost in fall or winter.
Keep It Fresh
Bay leaves should always be used dried
(see directions page 20).
In the Kitchen
Dishes: Soups, stocks, sauces, stews,
marinades, roasts, braises, rice
Prep: Simply place whole bay leaves in
your pot or pan and cook; just remem-
ber to remove them before serving.
Serve: Bay leaves are known to bring
out the flavors of other ingredients in a
dish. Add a couple whole leaves to slow-
cooked meats, lentils, stews, soups, and
sauces, and remove before serving. But
don’t overdo it—a little bay leaf packs a
lot of flavor.
