EGGS


Eggs are perfectly fine food. I’m talking about real eggs here, not vegetable oil–
based, fabricated foods like Egg Beaters. Back in the old days, eggs were
considered healthy. Unfortunately, some faulty research that came out in the
1980s gave eggs a bad rap. Recent research indicates there is no harm in eating
eggs— even on a daily basis—since most cholesterol is produced inside our
bodies. In fact, if you eat cholesterolrich foods like eggs, your body will use the
ingested dietary cholesterol to repair tissues and make essential sex hormones
(estrogen, progesterone, and testosterone) that keep you young, healthy, radiant,
and fit.
The medical establishment is still encouraging us to avoid egg yolks for fear
of heart disease, but this is inaccurate advice. When you eat eggs, you are better
off eating the yolks than the whites, since the yolks contain healthy vitamins and
the good omega-3 fatty acids that prevent heart disease. One large egg yolk also
contains 245 IU (international units) of vitamin A, 18 IU of vitamin D, and
lutein, which is essential for healthy eyes. Eggs also contain chromium, which
enhances insulin function.
Today, most chickens are given hormones and antibiotics. They are fed corn,
which makes the amount of omega-6 fatty acids in their eggs higher than the
healthy omega-3 fatty acids. For this reason, it is vastly superior if you can buy
eggs produced from pasture-fed or freerange chickens. Eggs from pasture-fed
chickens contain more omega-3 fatty acids and vitamins, since their diet includes
green plants and insects. Eggs from pasture-fed chickens can be bought from
organic food stores, local farmers, and online. Organic eggs (which don’t have
quite the nutritional content of pasture-fed eggs since the chickens’ diet is
artificial) are readily available in most supermarkets.
