½   cup shredded,   unsweetened coconut,    lightly toasted

DIRECTIONS



  1. Combine the egg yolks and agave in a medium bowl.

  2. Bring the heavy cream to a simmer in a pot over medium-low heat.

  3. Pour 1 cup of the cream into the egg yolk mixture, whisking constantly.

  4. Pour the yolk mixture into the pot. Cook, stirring constantly, until the
    mixture is very thick.

  5. Remove the pot from the heat; stir in the coconut milk,the remaining
    cream, and the vanilla extract.

  6. Chill 4 hours.

  7. Pour the mixture into an ice cream maker. Process according to the
    manufacturer’s directions.

  8. Scoop into bowls, and add shredded coconut on top. Serve.

INGREDIENTS


2   to  3   small   unripe  bananas
4 cups coconut milk
1 to 2 teaspoons agave (optional) Pinch salt (optional)

DIRECTIONS



  1. Slice bananas lengthwise, and then halve the pieces.

  2. Pour the coconut milk in a pan.

  3. Add the agave and a pinch of salt, if desired.

  4. Bring the mixture to a boil. Add the bananas.

  5. Cook for 2 minutes, and remove from the heat.

  6. Serve hot or cold, to taste.
