½ cup shredded, unsweetened coconut, lightly toasted
DIRECTIONS
- Combine the egg yolks and agave in a medium bowl.
- Bring the heavy cream to a simmer in a pot over medium-low heat.
- Pour 1 cup of the cream into the egg yolk mixture, whisking constantly.
- Pour the yolk mixture into the pot. Cook, stirring constantly, until the
mixture is very thick. - Remove the pot from the heat; stir in the coconut milk,the remaining
cream, and the vanilla extract. - Chill 4 hours.
- Pour the mixture into an ice cream maker. Process according to the
manufacturer’s directions. - Scoop into bowls, and add shredded coconut on top. Serve.
Kuai Buat Chi (Banana Cooked in Coconut, a Thai Dessert)

INGREDIENTS
2 to 3 small unripe bananas
4 cups coconut milk
1 to 2 teaspoons agave (optional) Pinch salt (optional)
DIRECTIONS
- Slice bananas lengthwise, and then halve the pieces.
- Pour the coconut milk in a pan.
- Add the agave and a pinch of salt, if desired.
- Bring the mixture to a boil. Add the bananas.
- Cook for 2 minutes, and remove from the heat.
- Serve hot or cold, to taste.
