Sunday Supper Pot Roast
Over Mashed Fauxtatoes
prep time: 15 minutes (not including time to make fauxtatoes) cook
time: 6 hours yield: 8 servings
1 (5-pound) bone-in beef chuck roast
Fine sea salt and ground black pepper
3 tablespoons ghee (or coconut oil if dairy-free),
divided
2 stalks celery, cut into ½-inch pieces
2 sprigs fresh thyme
1 sprig fresh rosemary
8 ounces sliced mushrooms
1 cup chopped onions
2 cloves garlic, minced
2 tablespoons tomato paste
2½ cups beef bone broth, homemade (here) or store-
bought
1 batch Mashed Fauxtatoes (here) (or Cauliflower
Rice, here, if dairy-free), for serving
- Season both sides of the roast liberally with salt
and pepper. - Heat 2 tablespoons of the ghee in a large skillet
over medium-high heat. When hot, sear the roast for 5
minutes on each side, or until browned.
