Zucchini Hummus


Serves 2


Ingredients


1 zucchini, peeled and chopped (about 1 1⁄2 cups)
2 tablespoons raw tahini
1⁄2 lemon juiced
1 teaspoon crushed garlic (2 gloves)
1⁄4 teaspoon ground cumin
cayenne pepper to taste
sea salt to taste

Directions



  1. Take the pits out of the olives (if necessary).

  2. Place garlic, olives, olive oil and some juice in a blender and blend (I prefer not too
    fine).

  3. Add salt & pepper and lemon juice to taste.
