Zucchini Hummus
Serves 2
Ingredients
1 zucchini, peeled and chopped (about 1 1⁄2 cups)
2 tablespoons raw tahini
1⁄2 lemon juiced
1 teaspoon crushed garlic (2 gloves)
1⁄4 teaspoon ground cumin
cayenne pepper to taste
sea salt to taste
Directions
- Take the pits out of the olives (if necessary).
- Place garlic, olives, olive oil and some juice in a blender and blend (I prefer not too
fine). - Add salt & pepper and lemon juice to taste.
