(a) Washthedryflatfishthoroughly. Rub
overitacoatingofoilorlard. Placeontop
of acharcoalfireby means of a wire. Itis
done when there are bubbles onthe surface.
Turnoverandcontinuethesame. Becareful
nottoletitgetburnt.
(b) Tearthe fish intothreads. Mix with
thesethreadsthesesamum-seedoil,peanutoil,
andredvinegar. Sugar tosuitthetaste.
