1% cups bird-nest
1 largewholechicken (atleast 7 pounds)
1 bowlprimary soup
1 tablespoonfulChineseham

(a) Soakthebird-nestincoldwaterfor 1
hour. Thenwashgentlyand cookfor 1 hour
withapiece,ofginger.
(6) Pick the chicken, chop off the head,
feet andwings, cut 1 line 4 inches longand
takeouttheinterior. Cleanthe chickenand
rubinside and outsidewith salt. Placein a
bowlwiththecutsideontop.
(c) Fillthechickenwiththebird-nestand
the primarysoup. Steam for 3 hours in a
double-boiler.
(d) Nowtransferintoasecondbowlbyus-
ingabowlalittlelargerthanthefirstbowland
putting this second bowl on top of thefirst
bowlmouthtomouth.
