Exotic Fruit Salad
Nature provides such a wide range of flavors and colors, and each area of the world has its own unique offerings. Travelers can take in more
than just the sights of a foreign land; they can experience new tastes that broaden the senses. At home, look for tropical fruits in local Mexican
or Asian markets. Poha berries are also known as Chinese lanterns, inca berries, golden berries, or psylis fruits; they are available at many
markets in both fresh and dried forms, and the fresh ones are contained in a little paper lantern (hence the name) much like a miniature
tomatillo. For a fun presentation of this salad, serve it in papaya boats—halved papayas with seeds and flesh removed.
SERVES 2 TO 4
2 cherimoyas, peeled, seeded, and sliced
1 papaya, peeled, seeded, and diced
1 mango, peeled, seeded, and diced
1 eggfruit, peeled, seeded, and thinly sliced lengthwise
1 sapote, pulp seeded and mashed
5 to 10 Surinam (pitanga) cherries, pitted, or poha berries
Freshly shredded coconut, for garnish
Combine the cherimoyas, papaya, mango, eggfruit, and sapote in a large serving bowl. Gently fold in the cherries, sprinkle the coconut on top, and
serve.
