Tropical Fruit Salad
Tropical treats can add delicious new flavors as well as varied nutrients to your diet. Many of the tropical fruits in this salad can be obtained in
Asian markets. If you live in the tropics, remove the seeds from the papayas, persimmons, and cherimoya, and plant them. In time, you’ll be
able to harvest and enjoy your own fruit.
SERVES 4 TO 6
2 papayas, peeled, seeded, and cut into ½-inch cubes
2 mangos, peeled, seeded, and cut into ½-inch cubes
1 pineapple, peeled, cored, and cut into ½-inch cubes
3 Hachiya persimmons, seeded and cut into ½-inch cubes
1 cherimoya, peeled, seeded, and separated into small sections
1 small bunch bananas, peeled and thickly sliced crosswise
1 star fruit, peeled and thinly sliced crosswise
1 kiwi, peeled and thinly sliced
Freshly shredded coconut, for garnish
Place the papayas, mangos, pineapple, persimmons, cherimoya, and bananas in a large serving bowl. Alternate star fruit and kiwi slices in a spiral
over the top. Garnish with the coconut.
