Apples with Ginger Chutney


Apples are available year-round and make excellent “chips.” By thinly slicing the apple lengthwise around the core, you can obtain an average


of ten slices per apple.


SERVES 2 TO 4

10 dates, seeded
¾ cup filtered water
1½-inch piece fresh ginger
¼ cup freshly squeezed orange juice
Pinch of ground cinnamon
4 crisp apples, cored and thinly sliced

Place the dates in a small bowl, cover with the water, and soak for about 1 hour, or until soft. Finely grate the ginger with a ginger grater or fine
grater to extract its juice (you should have about 1 tablespoon). Place the dates and their soaking water along with the ginger and orange juices
and cinnamon in a blender and blend until smooth. Arrange the apple slices on a plate and pour the date mixture over them, or serve the date
mixture in a bowl with the apple slices around it.
