Star Fruit and Raspberry-Nut Kreme


Star fruit, also known as carambola, has five to seven deep lengthwise ribs that form beautiful star shapes when the fruit is sliced crosswise. The


edges (points of the star) can be tougher than the rest of the fruit, so it is often nice to remove the edges and the seeds before use.


SERVES 2 TO 4

1 cup dates, seeded
1 cup filtered water
1 cup sprouted nuts
10 raspberries
2 star fruits, thickly sliced crosswise
Fresh mint leaves, for garnish

Place the dates in a small bowl, cover with the water, and soak for about 1 hour, or until soft. Drain, reserving the liquid. Place the dates, nuts, and
raspberries in a blender and blend slowly, adding the reserved liquid as needed until the mixture becomes smooth. Arrange the star fruit on a plate.
Spoon some of the nut kreme on each slice. Garnish with the mint leaves.
